Emulsions are water-based, while extracts are alcohol-based. Since It's water-based, Hazelnut Emulsion doesn't evaporate as quickly as an extract, resulting in more flavorful and aromatic baked goods. Hazelnut Emulsion is also thicker than hazelnut extract and distributes more evenly in batters and icings. How is Hazelnut Emulsion used? You can substitute Hazelnut Emulsion in most recipes calling for Hazelnut extract.1 teaspoon of hazelnut extract = 1 teaspoon of Hazelnut Emulsion. Try it in cakes, cookies, fillings, and icings. Due the water content of emulsions, it's best to use an extract instead of an emulsion in candy, including chocolates and truffles. However, Hazelnut Emulsion is suitable for candy fillings.
